BOURGOGNE CHITRY
Regional naming of the vineyard of the Inhabitant of Auxerre, in the Yonne. The naming BURGUNDY CHITRY is reserved for white, red and pinkish wines produced in the area bounded by the municipality of Chitry. Municipaliy of production: Chitry, in the department of the Yonne. On the label, the mention CHITRY must be registered at once below the name BURGUNDY. In white (Chardonnay), Burgundy Chitry has the dress well gilded and rich in sometimes slightly green reflections. Its bouquet marries the flower (hawthorn, honeysuckle) and the fruit (lime, grapefruit), with a frequent point of flint. Its mouth is balanced, harmonious, carried by an acidity which allows him to beware some years. In red (pinot noir), this wine develops aromas of cherry, raspberry and currant under an asserted ruby. To the palace, tannins respect the flexibility of a simple but charming structure on the fruit. Chitry-le-Fort is the very former(ancient) wine municipality of the Inhabitant of Auxerre, in the department of the Yonne. It received in 1993 the right(law) to identify its wines within the naming Burgundy, under the name of BURGUNDY CHITRY. We find white, red wines and sometimes pinkish there, beside one Burgundy Aligoté remarkable. Snuggled up at the bottom of a funnel in the standing hillsides of vineyards, this village possesses a surprising church strengthened of the XIIIth century flanked by a big tower which protected it from plunders during the wars. The vineyard of Chitry occupies the hillsides which surround the valley where is the village.The exposure: nord-nord-ouest / sud-sud-est. This coast belongs to the Jurassic floor kimméridgien upper and average, argilo-calcareous and very favorable to a quality vineyard. We are here just a step from Chablis and in the same canton. Red wines and rosés, pinot noir grape variety. White wines, Chardonnay grape variety. Surfaces in production: Whites: 38,55 ha Red and rosés: 26,24 ha
