BOURGOGNE HAUTES-CÔTES DE BEAUNERegional naming of the vineyard of the High Coast, in Côte-d'Or. Municipalities of production: been born officially in 1961, the naming extends in Côte-d'Or, on 12 municipalities of the High Coast and on the heights of 10 municipalities of Côte de Beaune. In Saône-et-Loire, it extends over 4 municipalities of the High Coast as well as over the heights of 3 municipalities of Côte de Beaune. The line of sharing with Côte de Nuit passes to Magny-Lès-Villers. The naming BOURGOGNE HAUTE COTE DE BEAUNE can be attributed only after an examination of enjoyment of wines (tasting and analysis). In red (pinot noir), the purple dress in the dark purple nuances calls back the flower of peony or the depth of certain roses. The fruity nose evokes the Morello cherry and the raspberry, it evolves towards the blackcurrant, the liqueur up to the undergrowth with often a spicy key. The High Côte de Beaune is captivating wines by their spontaneity and their franchising. Sometimes firm in their youth, they find at the end of some years the harmony and the balance. There is a small production of Burgundy rosé (or Burgundy Light red wine) High Côte de Beaune, stemming from some pinot noir. In white (Chardonnay, very rarely white or grey pinot), nuances slightly Straw in the reflections of pale gold. The aromas of white flowers join to the honey, calling back the gingerbread. In mouth, the elegance is safe, pleasant (safe, kind, sure, pleasant, sure, kind), keeping the freshness of the vine without giving in to the excess of softness.
