SAINT-BRIS Municipal naming of the vineyard of the Inhabitant of Auxerre, in the Yonne. This naming is exclusively reserved for white wines produced inside the area bounded by the naming Saint breaking. It was created by decree of January 10th, 2003 and replaces the former naming Sauvignon de Saint-Bris. Municipalities of production: Saint-Bris-le-Vineux, Chitry, Irancy, Quenne, Vincelottes.
It is a white, a sauvignon. The eye is often pale straw, now light. We are situated here just a step from Auxerre. The Saint breaking declines notes of citrus fruits (grapefruit, mandarin), of peach and creased sheets of blackcurrant. Sometimes coming along with exotic nuances (litchee) this complexity uncorks on fruity ample, floral and soft one coloured of one finale spicy and iodized. The age will bring it towards aromas of jams and candied fruits. To have a rough time in its youth or after some years.
In the heart of the vineyard of the Inhabitant of Auxerre and on the edges of the Yonne, Saint-Bris-le-Vineux, an old stony village, rests on the most surprising extraordinary, medieval cellars of Burgundy: they run under all the country. He is added to it the former careers of Bailly (the stone of the Pantheon in Paris), 3,5 ha of cellar in underground 60 meters! Saint breaking is really worth seeing.
The Jurassic grounds are diverse, from the portlandien to the kimméridgien. Limestones in astartes (kimméridgien subordinate) at the edge of the alluviums of the Yonne and at feet of slopes marno-limestones. The best situations are in height hillsides of north exhibition which confers an ideal maturity for fruity sound.
White wines exclusively, sauvignon and grey sauvignon. The sauvignon is cultivated in Burgundy only in the region of Saint-Bris-Le-Vineux. This strong vine gives compact clusters with small and egg-shaped berries, beautiful golden yellow with maturity, with the thick film and with the tender pulp. On this Burgundian soil, it produces dry, light, fresh and very pleasant white wines.
