Billecart-Salmon The house, located in Mareuil-sur-Ay since the seventeenth century, has experienced strong growth over the past twenty years. In terms of winemaking, the ideas are very precise, as the desire to highlight the finesse and delicacy (settling and fermentation at low temperature). Part of the grapes are fermented in Burgundian barrels. The great vintages remain at the highest level thanks to the rare Clos Saint-Hilaire, Small Vineyard Pinot Noir 44, down hills in Mareuil, facing east (as the Clos des Goisses is south) vinified in oak barrels to 100%.
