Salon The spirit of this micromaison remains unchanged since its creation in the Roaring Twenties, by his mentor, Aimé Salon. The champagne, the paragon of blanc de blancs, from a single grape variety, Chardonnay, one thought, Mesnil-sur-Oger, and a single vintage, still a great, without malolactic fermentation.
